2. Professional applications
The PSV PM2 is designed for food-processing professionals carrying out brining operations by injection.
Its main applications include:
-
Brine injection into hams.
-
Salting meat cuts and charcuterie products.
-
Preparation of traditional cured and salted meat products.
-
Brining of certain fish preparations.
-
Salting operations in butcher shops, charcuterie workshops and catering facilities.
3. Start-up procedure
Step 1 – Preparing the brine container
Place the container holding the brine close to the pump. Make sure the preparation is thoroughly mixed and that all the salt has completely dissolved.
Step 2 – Installing the suction system
Fully immerse the suction hose in the brine container, making sure that the suction strainer (filter) is correctly fitted.
The strainer is essential to prevent particles from entering the pump and potentially obstructing or damaging the pumping system.
Step 3 – Connecting the discharge line
Connect the reinforced flexible hose to the pump outlet and check that the injection gun is securely attached.
Also check that all connections are properly tightened to prevent air entering the circuit or brine leaking.
Step 4 – Connecting the power supply
Connect the machine to an electrical outlet compatible with its specifications and switch the main power switch to the ON position.
Step 5 – Priming the pump
Hold down the injection gun trigger over the brine container to allow the liquid to be drawn into the circuit.
As the pump is self-priming, the brine should gradually rise through the suction hose.
Once the liquid flows steadily, without air bubbles, the equipment is ready for injection.
4. Safety instructions
Warning: dry running is strictly prohibited.
The brine also contributes to the lubrication and cooling of certain internal pump-head components. Operating the machine without liquid may cause premature deterioration of the seals and pumping components.
Never allow the pump to run dry for more than 15 to 20 seconds. If there is no suction or liquid flow, stop the machine immediately and identify the cause before restarting it.
Additional precautions:
-
Check the condition of the power cable and plug before each use.
-
Never handle electrical connections with wet hands.
-
Always disconnect the machine from the mains before cleaning or dismantling any component.
-
Never point the injection gun towards another person.
-
Never work on the circuit while the pump is running.
5. Cleaning and maintenance procedure
The salt contained in the brine can promote corrosion and cause deposits that may obstruct pipes, internal passages and accessories.
For this reason, thorough cleaning after every use is essential to maintain proper operation and extend the service life of the equipment.
Step 1 – Replacing the brine
Remove the suction hose from the brine container and place it in a clean container filled with warm fresh water at approximately 40°C.
Step 2 – Flushing the circuit
Immerse the suction strainer in the clean water and operate the injection gun to circulate water throughout the entire system.
Flush for approximately 2 to 3 minutes to remove salt residues from the suction hose, pump, flexible hose, injection gun and needle.
Step 3 – Cleaning the injection needle
Disconnect the machine from the electrical supply.
Remove the needle from the injection gun and check that the side openings are not blocked by meat particles or small brine deposits.
Carefully clean all dismantled components before reassembly.
Step 4 – External cleaning and storage
Wipe the exterior surfaces of the machine with a clean, damp cloth.
Store the equipment in a clean, dry location, protected from the ambient humidity of the workshop.
6. Maintenance and spare parts
The PSV PM2 is a model that can also be found on the professional second-hand equipment market.
Accessories and replacement parts that may be required include:
-
Trigger-operated injection gun.
-
Injection needles.
-
Flexible hoses and connectors.
-
Quick-release couplings.
-
Suction hoses.
-

Spare-part availability depends on the machine version and manufacturer references. Compatibility should always be checked before ordering components from a specialist butcher and charcuterie equipment supplier.
7. Operating recommendations
To ensure reliable operation and extend the service life of your PSV PM2 brine injection pump, the following good practices are recommended:
-
Use properly prepared and thoroughly mixed brine.
-
Avoid drawing in undissolved salt crystals.
-
Regularly check that the suction strainer is clean.
-
Inspect hoses and connections for wear or damage.
-
Always flush the entire circuit after each use.
-
Never leave brine standing inside the circuit after operation.
Important: This technical data sheet and these operating instructions have been prepared using the specifications and information provided. They do not replace the manufacturer's original operating manual. Electrical parameters, operating limits and cleaning instructions must be checked against the documentation corresponding to the exact PSV PM2 version being used.
